Delicious, full of aroma, very crunchy lemon cookies. Perfect to the afternoon tea. Easy to prepare, great for unexpected guests. Bon apetit!
|ground almonds - 200g|
|flour - 200g|
|soft butter - 150g|
|sugar - 100g + to sprinkle after baking|
|eggs - 2|
|juice squeezed from 1 lemon|
|Lemons with rum ETERNO - 2 jars|
Prepare the dough 3h before baking. Chop 3 slices of lemons from the jar. Mix together butter and 1 egg, add ground almonds, sugar, flour, and chopped lemons. Add 2 teaspoons of fresh lemon juice and 2 teaspoons of syrup from the jar. Knead the dough. Make 2 rollers and put into the fridge.
Slice each roller into 5-7mm slices. Place on the baking sheets and bake in 180C for about 15min.
Sprinkle a little bit of sugar on each cookie after baking.
